After having our second baby finances were very tight so I started looking around for cheap family meals that would be healthy and satisfying for a family this was one of the ones that a friend suggested to me and it was delicious so I thought I would share it.
This recipe will serve at least 4 people, but with crusty bread alongside we can usually feed 6 (two little people and 4 adults). It can be frozen, but I would do this prior to adding the pasta and cabbage personally, but that’s just me.
Ingredients:
- Olive oil for sauté
- 1 medium onion
- 1 pack of smoked bacon
- 2-3 garlic cloves
- 3 sticks celery
- 3 carrots
- 1/2 cup of water
- 1 tbsp. tomato puree
- 1 tin of chopped tomato
- 2 pints of chicken stock (to save extra money and add a great flavour you could roast a chicken for Sunday lunch and use the bones to make the stock)
- 1/2 tsp. oregano
- Savoy cabbage head chopped
- Farfalline (amount to be added according to your taste)
- Salt and Pepper to taste (I don’t add salt during cooking if I am serving to the kids, but let hubby add his own)
Method:
- Sauté onions small amount of olive oil until softened (not browned)
- Add bacon and sauté until cooked through, but keep on low-medium heat so that onions don’t burn
- Chop garlic finely and add this, celery and carrots to pan
- Continue to fry stirring for about 5 mins taking care that veg doesn’t burn or stick
- Add water to pan, turn down heat and put on lid
- After 10 mins add in the remainder of the ingredients and simmer for 45 mins
- Add savoy cabbage and roughly 2 handfuls of farfalline (you can use Farfalle if you can’t find the small ones)
- Cook for further 10 mins
- Serve hot with crusty bread
