Cheap family meals are what I am always seeking and I just recently remembered another which was one of my favourites; my mum’s pasta bake. We often used to have this as children and I would always be left wanting more.  I mean cheese, pasta, tomato and mince what’s not to like…
As a mummy I am now seeing this meal in a whole new light as it is cheap, the kids love it. its nutritious and the best part is that you can have the leftovers cold the next day as a pasta salad.
Ingredients:
- 1-2 tbsp. olive oil
- 1 onion
- 1 pepper
- 1 can of sweetcorn
- 1 courgette
- 1 can of tomato soup
- 500g bag of Farfalle Pasta
- Cheese (enough to cover the top)
- 500g Minced Beef (can also use quorn mince)
Method:
- Boil water for pasta and cook pasta until just before al dente (no more as it will be too soft)
- Chop up onion and pepper
- Shallow fry until softened
- Add mince and shallow fry until browned
- Add the soup and corn and stir
- Put pasta and other ingredients into pyrex or other over proof dish and grate cheese over the top
- Cook in an oven heated to 180 degrees C for around 45 mins or until cheese is bubbling and starting to brown
